BEETS A L'ORANGE 
3 tbsp. grated orange rind
1 c. orange juice
1/2 tsp. salt
1 tbsp. cornstarch
4 c. beets, cooked and sliced
Fresh ground black pepper (optional)

Combine orange rind, juice, salt and cornstarch in top of a double boiler. Cook and stir until thickened. Add beets and heat through. Sprinkle with black pepper (optional).
