SWEET POTATO PUDDING 
4 c. grated uncooked sweet potatoes
4 eggs, beaten slightly
1 1/2 tsp. vanilla
2 c. sugar
1 c. sweet milk
1 c. butter, softened
1 tsp. nutmeg

Mix all ingredients together and pour into a buttered baking dish. Bake until golden brown in a 350 degree oven, stir once and let cool. Then let cook for another 15 to 20 minutes. It will be brown and glazed on top.
