SWEET POTATO PUDDING 
4 c. raw sweet potatoes, grated
2 c. milk
3 eggs
3 tbsp. butter
3/4 tbsp. sugar, preferably brown
3/4 tsp. salt
1 tsp. nutmeg
1 tsp. vanilla

Mix all ingredients thoroughly and pour into greased casserole. Dot with butter. Bake at 325 degrees about 1 hour or until brown on top. Especially good when the main dish is ham. Serves 10.
