2 c. sugar
4 eggs
1/2 stick butter
1 tsp. vanilla
1 sm. can evaporated milk
4 c. cooked and mashed potatoes
1 (9 inch) pie shell

Mix all ingredients. Beat until light and fluffy. Pour into unbaked 9-inch pie shell. Cook for 10 minutes on 450 degrees. Reduce heat to 350 degrees and bake for 25-35 minutes or until pie is firm.
