REFRIED BEAN CASSEROLE 
2 tbsp. oil
1 sm. green pepper, finely chopped
2 lb. can refried beans
1/2 - 1 tsp. chili powder
1 sm. onion, finely chopped
2 cloves garlic, mashed
1 c. sour cream
1 1/2 c. grated monterey jack

Heat oil and saute onion and pepper until well softened. Stir in garlic. Combine with beans, sour cream, and chili powder; turn into 1 1/2 quart casserole. Top with cheese and bake at 350 degrees for 20 minutes or until hot and bubbly and cheese has melted. Serves 4 to 5.
