REFRIED "MEXICAN" BEANS 
Soak 1 medium bag of pinto beans in water overnight. Rinse beans off in morning. Add water to cover. Chop 1 medium onion, 1 or 2 cloves of garlic, 2-4 tablespoons chili pepper, salt and pepper to taste. Bring to boil. Then simmer for 3-4 hours or until beans are soft. (Add water to beans if they dry out during cooking.) When beans have cooked and absorbed most of the water, mash with potato masher.

In a fry pan, cook beans. Take bacon out, allowing about 1/4 inch of bacon grease, refry beans in grease. Add a few slices of bacon, chopped up, if you want. Add 1 or 2 cups of shredded Colby or your choice of cheese to beans and 1/4 cup or more of taco salsa to taste. Use on burritos or as a side dish.
