REFRIED BEAN CASSEROLE 
2 tbsp. olive oil
1 sm. onion, minced
1 sm. bell pepper, minced
3 cloves garlic, pressed
1 tsp. chili powder
1 tsp. ground cumin
2 lb. can refried beans
1 1/2 c. shredded sharp Cheddar cheese
1/2 c. sour cream

Heat oil in frying pan and saute onion, pepper and garlic with chili powder and cumin until vegetables are limp. Transfer to mixing bowl and combine with beans, 1 cup cheese and sour cream. Put in casserole and top with remaining cheese. Bake, uncovered, at 350 degrees for 20 minutes, until hot and bubbly. Serve with nacho chips as appetizer or main dish.
