PORK CHOPS PIERRE 
1 sm. onion
2 stalks celery
1 lg. onion
1 lg. green pepper
2 tbsp. butter
1/4 c. water
1/2 c. ketchup
2 tbsp. vinegar
1 tbsp. lemon juice
1 tbsp. Worcestershire sauce
1 tbsp. brown sugar
1/2 tsp. salt
1/8 tsp. pepper
8 pork chops 1/2 inch thick

Peel small onion, finely chop onion and celery. Peel large onion and slice thinly. Seed green pepper and cut into rings, set aside.

Combine butter, onion, celery in 2 quart pan; saute until tender. Add water, ketchup, vinegar, lemon juice, Worcestershire sauce, brown sugar, salt, pepper; cover and simmer 20 minutes. Brown pork chops on both sides in preheated fry pan. Place chops in 9 x 13 bake pan; pour sauce over chops; top with onion slices and green pepper rings. Cover with aluminum foil and bake 45 to 50 minutes at 350 degrees. 8 servings.

This is an awesome recipe except i added two other ingredients: a tablespoon of A1 sauce and 1/2 a cup of white wine.Add the A1 at the beginningbefore simmering for 20 minutes and add the wine before putting in the oven.Very good!

This is so amazing. I have been making this recipe since the 70's, it was one of the few things I could make when I was single...it came out of a cookbook I had at the time, but I can't remember the name (somehow "Mealtime Magic" rings a bell). I still make it occasionally, and just did tonight for the first time in maybe 3 years, but just went on-line since the internet now has EVERYTHING...and here it was. Word for word. But my original recipe called for wrapping each "packet" in foil. I think that was a new preparation at the time, but I now do as above and just bake in a covered pan. Just as good.
