EASY CHICKEN CASSEROLE 
2 to 3 lbs. boneless chicken breasts, or tenderloins
1 stick butter
1 c. water
1 c. rice (not instant rice), uncooked
1 can Cream of Chicken soup
1 can French Onion soup

Preheat oven to 350 degrees. Melt stick of butter in large covered casserole dish in preheated oven. When melted, add 1 cup rice, 1 cup water and stir. Lay chicken pieces evenly over butter/rice mixture. Pour a can of French Onion soup over chicken, then spoon cream of chicken soup evenly over everything. Cover and bake 1 hour in 350 degree oven.

In place of the french onion soup I mixed 1 cup of chicken broth, 1 tbsp. of minced onion, 1 tsp. marjoram and 1 tsp. rosemary. This works out very well for those who do not like french onion soup. Please note that this was the only change I made to this recipe.
