MY MOM'S FRIED POTATOES 
4 to 6 potatoes, sliced or cubed
1 to 2 onions, chopped
2 tbsp. shortening (Crisco), for frying
salt and pepper, to taste
shake of Adobo seasoning (optional)

If you want to make cubed potatoes you should boil them first, until a little soft, then drain well. If sliced put them in Crisco and fry until a little brown. Add onions last otherwise onions will get black from frying together with potatoes. Season with salt and pepper. I also add Adobo seasoning salt. Add a little bit of water and cover turning heat down to low. You will have soft and crunchy potatoes.
