“CRISPY SWEET POTATO FRIES” IS IN:

CRISPY SWEET POTATO FRIES 
1 tsp. kosher salt
1/4 tsp. cayenne pepper
1/2 tsp. garlic powder
1/2 tsp. cinnamon
3 lg sweet potatoes
canola oil, for frying

In bowl, combine salt, pepper, garlic powder and cinnamon. Halve each potato lengthwise. Slice into 1/4" sticks. In lg pot, heat oil. In batches, cook fries in oil for 5 minutes or until crisp. Drain on paper towels. Sprinkle with cayenne mix over fries.

Variation: I sliced the potatoes into thin rounds and pan fried them in about 1 tbsp. of olive oil. Then sprinkled each seasoning on individually after browning, and added chopped pecans, a sprinkle of brown sugar, and about 1 tbsp. of butter to finish. They weren't crispy, but they were delicious!

My fries did not turn out as crispy as I would like. I also added brown sugar. The seasoning then turned out amazing!! Wish the fries were crispy. The husband ate them up and requested them for lunch tomorrow!! :-)

Simple, best results I have had. Make sure to heat the oil to 375°F degrees and fry for 4 minutes. Perfect.

This is also excellent - (when done) - pour a little pancake syrup over - then pecans. Pancake syrup has a brown sugar taste... I have a Bourbon Sweet Potato recipe for Christmas... and believe it or not - the pancake syrup makes this almost identical.
