GRANDMA'S PECAN COOKIES 
1 c. butter
4 tbsp. confectioners sugar
2 c. cake flour
1 tsp. vanilla
1 tsp. salt
1 c. pecans, coarsely chopped

Hand stir flour, sugar and softened butter until well blended. Add vanilla, salt and finally pecans. After all ingredients are blended, refrigerate until firm (may be put in freezer briefly). Hand roll cookies into football shapes about 2 inches long. Bake in moderate oven (300 degrees) until very light brown, 45 minutes to 1 hour. Cool slightly and shake individually in a bag of confectioners sugar. Great Holiday Cookie!
