SCOTT'S CHICKEN CURRY WITH BROCCOLI | |
2 lb. chicken breasts (boneless, skinless), diced 2 cups broccoli 1/2 cup pine nuts 1 cup fresh sliced mushrooms olive oil (EVOO) CURRY SAUCE: 1/4 cup mayonnaise 3/4 cup dairy sour cream 1 tbsp. plain yogurt 3 tbsp. curry powder (I like Lalah's) In a small bowl prepare sauce mixture by adding mayonnaise, sour cream and yogurt to curry powder. Mix together until blended. Let mixture stand for about 10 to 15 minutes so flavors will blend together. Meanwhile, dice chicken into small pieces then set aside. Heat olive oil in pan until hot, add chicken and cook until browned. I sometimes season with chicken with a spice as well but that is up to you. Once chicken is done set aside. Next add fresh sliced mushrooms and broccoli to large skillet or pot with a little water and steam. Take pine nuts and lightly toast in 350°F oven until browned. Then add chicken to broccoli mixture. Serve with curry sauce drizzled over top. Variation: You can also serve with a wheat pasta to keep this meal healthy! Submitted by: Scott Chester |
