CHICKEN PARMESAN 
4 boneless, skinless chicken breasts
2 (14 1/2 oz. ea.) cans Del Monte Italian Style stewed tomatoes
2 tbsp. cornstarch
2 tsp. oregano
1/4 tsp. hot pepper sauce
1/4 cup Parmesan cheese

Preheat oven to 425°F.

Place chicken in baking dish. Bake for 15 minutes, drain.

Combine tomatoes, cornstarch, oregano, and pepper sauce; cook stirring constantly until sauce is thickened. Pour sauce over chicken; top with Parmesan cheese. Bake an additional five minutes uncovered.

This recipe is great served with roasted potatoes.

Serves 4.
