ALMOND RICE PILAF (VEGETARIAN) 
1 cup white rice (any kind)
1 cup orzo pasta
1 shallot, diced
1/2 onion, chopped
3 cloves garlic, minced
1 1/2 tbsp. parsley
4 tbsp. dried chopped onion
1/2 cup sliced unsalted almonds
2 cups water
3 tbsp. olive oil, divided
salt and pepper, to taste

In a pan heat 2 tablespoons of olive oil. Pour orzo pasta into pan, turn to medium-high heat and sauté orzo pasta, after a few minutes, turn heat to medium, pour onions, dried onions (has a different flavor), shallot, parsley, garlic, and almonds and sauté till the orzo is golden brown.

Note: DO NOT COOK TOO LONG - PASTA AND GARLIC WILL BURN.

Next, pour white rice and 2 cups of water into the pan. Heat to a boil. Cover with lid and simmer at low heat.

Rice will be done once water has evaporated and flakes with a fork. Pour the remaining 1 tablespoon of olive oil to separate and add flavor, and serve. Season with salt and pepper, to taste.
