CHEESY POTATO PANCAKE | |
3 oz. grated sharp Cheddar 8 potatoes, skinned and sliced 1/8 inch thick 2 tbsp. butter Dash salt and pepper Melt the butter in a large skillet and arrange the first layer of potatoes so that they cover the skillet, over-lapping. Season lightly and add a layer of cheese. Repeat. End with a layer of cheese. Cover the pan and cook at a medium heat for 40-50 minutes. Loosen and serve. |
