FLUFF PANCAKES 
3 egg yolks
1 2/3 c. thick buttermilk
1 tsp. baking soda
1 1/2 c. sifted rice flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
3 tbsp. melted butter
3 egg whites, stiffly beaten

Beat egg yolks well. Add buttermilk and soda. Sift together rice flour, sugar, baking powder and salt. Beat into egg mixture. Beat in melted butter. Gently fold in egg whites. Fry pancakes or bake in waffle iron. For a variation: Use 3/4 cup rice flour and 3/4 cup cornmeal.
