UPSIDE DOWN HAM LOAF | |
1 tbsp. butter 1/2 c. brown sugar 1 (13 1/2 oz.) can crushed pineapple 3 maraschino cherries, quartered Milk 1 egg 1 c. soft white bread crumbs 2 tbsp. prepared mustard 1 tsp. salt 1/2 tsp. pepper 1 1/2 lbs. fully smoked ham, ground 1/2 lb. pork, ground 1. Preheat oven to 350 degrees. 2. Slowly melt butter in an 8"x8"x2" pan over low heat. Stir in sugar until smooth, remove from heat. 3. Drain pineapple well, reserving liquid. Spread pineapple over sugar mixture in pan. 4. Arrange cherries in a pretty design on pineapple; set aside. 5. Combine pineapple liquid with enough milk to measure 1 cup. 6. In a large bowl, beat egg slightly with a fork, stir in milk mixture, bread crumbs, mustard, salt and pepper. 7. Add ham and pork, mix until well combined, using hands if necessary. 8. Spoon mixture evenly over pineapple in pan, bake for 1 hour. 9. Drain off excess liquid, invert loaf on platter, so pineapple is on top. |
