MONDELBROT (SWEET ALMOND SLICES) | |
3 eggs 1 cup sugar 1/2 cup vegetable oil 1/2 tsp. almond flavoring (anise for biscotti) 1/2 tsp. vanilla 2 tbsp. orange juice 3 cups sifted flour 1/4 teaspoon salt 4 teaspoons baking powder 1 cup almonds, blanched and slivered Beat eggs until very light and fluffy, then gradually add sugar while continuing to beat. Slowly add the oil in a thin stream, beating well. Stir in the flavorings. Sift together dry ingredients; combine with nuts. Add to egg mixture, a third at a time, mixing well. Knead dough on a lightly floured work surface for 10 to 12 turns. Divide dough into several pieces and hand roll each piece into strips about 3 inches wide, 1 inch thick, and about 10 inches long, or the length of a baking pan. Place on a shallow baking pan that has been greased and floured, and bake in a preheated 350°F oven for 35 to 45 minutes or until Mondelbrot are a golden brown. Remove at once to a cutting board; cut into 1/2-inch thick slices while still warm. Return to oven to brown lightly on both sides (about 4 minutes per side). These cookies are very much like Italian Biscotti minus the anise flavoring, which can be added as a variation (add 1/2 tsp. pure anise extract). Makes about 5 dozen. Submitted by: CM |
