HAWAIIAN CAKE | |
1/2 c. shortening 1 egg beaten 1/4 c. brown sugar, packed 1 c. sifted all-purpose flour 1/2 tsp. baking powder 2 1/2 c. crushed pineapple Cream shortening; gradually add sugar and mix until creamy. Add beaten egg. Sift together flour and baking powder, add to creamed mixture. Pour into an 8 x 8 inch ungreased pan. Drain pineapple and spread over top of batter. 2 eggs 1 c. sugar 3 tbsp. melted butter 1 1/2 c. shredded coconut 1/2 c. chopped walnuts Beat eggs until light and fluffy; add sugar, then butter, coconut and nuts. Quickly spread over the pineapple and bake at 350 degrees until golden brown, 40 minutes. Cool before serving, then cut in 2-inch squares. |
