CORN BREAD CROWNED MEAT AND BEAN
PIE
 
1 to 2 lbs. ground meat
1 (16 oz.) can pork & beans
1 onion, chopped
1 (8 oz.) tomato sauce
1/4 c. ketchup
1 tsp. mustard
1/2 c. flour, sifted
2 tsp. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. cornmeal
1 egg, beaten
1/2 c. milk
1 tbsp. shortening, melted

Fry, then drain meat, add first 5 ingredients. Simmer 10 minutes. Sift together flour, sugar, baking powder and salt. Add cornmeal, 1 egg and milk after making well in it. Add dry ingredients, stir fast until moistened. Bring meat and bean mixture to a boil. Turn into casserole, drop cornmeal batter by spoonful evenly over top. Bake at 400 degrees 20 to 25 minutes or until toothpick comes out clean.

Substitute Jiffy cornmeal and any kind of beans.
