SAUSAGE ZUCCHINI PARMESAN 
4 med.-lg. zucchini, cut into sm. slices
1 yellow squash, cut into sm. pieces
1 very lg. onion
1 qt. spaghetti sauce
1 lb. Italian sausage
8 oz. Mozzarella cheese

Brown sausage and drain. Microwave or saute vegetables until half cooked, then drain the vegetables. Butter a 9 x 13 inch pan. Pour enough spaghetti sauce to cover the bottom of the pan. Alternate the sauteed vegetables and the sausage. Sprinkle Parmesan cheese over all. Stir, then add more spaghetti sauce. Top with Parmesan cheese and the Mozzarella cheese. Bake at 375 degrees for 45 minutes or until the top is well baked.

Since microwave ovens vary in power, you may need to adjust your cooking time.
