SAUSAGE ZUCCHINI CASSEROLE 
2 lb. pork sausage
1 lg. onion, chopped
1 lg. bell pepper, sliced
3 c. diced zucchini or yellow squash
1 1/2 c. American cheese, grated or sliced thin

Brown sausage in large skillet. Drain. Add onion, bell pepper and squash. Cook for 5 minutes stirring occasionally. Cook until tender. Put half of mixture in baking dish. Cover with half of the cheese, then the other half of the mixture, cover with the remaining cheese. Place in hot oven until cheese melts. This makes 8 servings. It also freezes well.
