SAUSAGE AND ZUCCHINI PARMESAN 
1/4 lb. hot Italian sausage
3 med. zucchini, cut in 1/2 inch pieces
1 med. onion, chopped
3 green peppers, cut in strips
1 clove garlic, minced
1 sm. can mushrooms, drained
1/3 c. Parmesan cheese
Salt
Pepper
Vegetable oil

Combine all ingredients except Parmesan cheese. Crumble sausage into vegetables.

Cook on medium heat using vegetable oil, covered 45 minutes. Stir occasionally. Remove cover and add cheese. Cook 15 minutes longer.
