ZUCCHINI WITH PARMESAN CHEESE 
1 c. chopped onion
4 tbsp. butter or olive oil
1 tsp. dried basil
4 med. zucchini, cut into 1/2 inch slices
2/3 c. grated Parmesan cheese
1/4 to 1/2 tsp. salt
1/4 to 1/2 tsp. pepper

Combine onion, butter or oil, and basil in a 1 1/2 quart casserole. Microwave, uncovered, on high for 5 minutes, stirring twice. Add zucchini to casserole. Cover and microwave on high for 7 to 9 minutes or until zucchini is tender, stirring twice. Stir in cheese and seasonings. Cover and let stand 5 minutes before serving. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
