CINNAMON TOPPED OATMEAL MUFFINS 
1 c. sifted all purpose flour
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. Mother's oats (quick or old fashioned, uncooked)
1/2 c. raisins
3 tbsp. liquid shortening
1 egg, beaten
1 c. milk

TOPPING:

2 tbsp. sugar
2 tsp. all purpose flour
1 tsp. cinnamon
1 tsp. melted butter

Sift together flour, sugar, baking powder and salt. Stir in oats and raisins. Add shortening, egg and milk. Stir only until dry ingredients are moistened.

Fill greased muffin cups 2/3 full. Sprinkle with cinnamon topping made by combining all ingredients. Bake in preheated hot oven (425 degrees) about 15 minutes.

Increased raisins to 2/3 cup. Added 1 tbsp. of molasses, 1/2 tsp. cinnamon to the muffin batter. Used buttermilk rather than the milk called for. Made 1 dozen muffins. Yum!
