CINNAMON-TOPPED OATMEAL MUFFINS 
1 c. sifted flour
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. oatmeal
1/2 c. raisins
3 tbsp. oil
1 egg, beaten
1 c. milk

TOPPING:

2 tbsp. sugar
2 tsp. flour
1 tsp. cinnamon
1 tsp. melted butter

Preheat oven to 425 degrees. Sift and mix together the first six ingredients (dry). Add oil, egg and milk. Stir only until dry ingredients are moistened. Fill greased muffin cups 2/3 full. Sprinkle with topping made of last few ingredients. Bake 15 minutes.
