SALMON FRITTERS 
1 lg. can (15 1/2 oz.) pink salmon
3 eggs, separated
3 tbsp. flour
1/2 tsp. salt
Dash of pepper
1/2 tsp. garlic powder
1 tbsp. minced parsley

Mash salmon; remove bones and skin. Beat egg yolks until light and thick. Add flour, salt, pepper, garlic powder, parsley, and salmon. Fold in whites of egg beaten until stiff. Drop by tablespoon into hot deep fat. Fry until brown.
