SOFT ROE FRITTERS 
Roe
Lemon
Salt
Butte r
Flour
Milk
Parsley, chopped
Oil

Wash in cold water and remove small blood vessel running down one side. Poach in stock of lemon juice, salt, butter and water. Cool. Place in marinade of lemon juice, parsley and oil. At serving, dip in flour and milk batter, deep fry. Drain and serve with lemon wedges.
