CORN FRITTERS 
2 eggs, beaten
2 c. canned or cooked fresh corn
2 tbsp. parsley, chopped fine
3/4 tsp. salt
Dash of pepper
1/2 tsp. baking soda
1 tsp. warm water
1/2 c. fine cracker crumbs

Mix beaten eggs, corn, parsley, salt and pepper. Dissolve soda in warm water; add to corn mixture. Add cracker crumbs and shape mixture into cakes. Fry in deep shortening until golden brown. Drain on absorbent paper. You can use mashed potatoes instead of cracker crumbs if you wish.
