1 c. chopped zucchini
1 c. chopped tomato
1/2 c. chopped onion
1/2 c. grated Parmesan cheese
1 c. milk
1/2 c. Bisquick baking mix
2 eggs
1/2 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Lightly grease square baking dish, 8 x 8 x 2 inch. Sprinkle zucchini, tomato, onion and cheese evenly in pie plate. Beat remaining ingredients in blender on high speed 15 seconds. Pour evenly in dish. Bake 30-35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before cutting.
