4 c. thin sliced zucchini
1 c. Bisquick
1/3 c. oil
1/2 c. chopped onion
1/2 c. grated Parmesan cheese
1 tsp. parsley, chopped
Garlic powder & onion & pepper to taste
4 beaten eggs

Mix the first seven ingredients together. Beat the eggs and add to the dry ingredients. Put into a 9" pie pan and bake in a preheated oven at 350 degrees for 45 to 50 minutes. Serve hot or cold. This is also a delicious side dish.
