2 c. chopped zucchini
1 c. chopped tomato
1/2 c. chopped onion
1/3 grated Parmesan cheese
1 1/2 c. milk
3/4 c. Bisquick
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

Preheat oven to 400 degrees. Grease 10 inch quiche dish or pie plate. Sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients until smooth. 15 seconds in blender on high or 1 minute with hand blender. Pour slowly into plate. Bake until knife inserted in center comes out clean. Approximately 30 minutes. Serves 6.
