IMPOSSIBLE TOMATO ZUCCHINI PIE 
2 c. chopped zucchini
2 c. chopped tomato
1/2 c. chopped onion
1/3 c. Parmesan cheese
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
1/2 tsp. salt & pepper

Grease 10 inch baking dish, sprinkle zucchini, tomato, onion and cheese in dish. Beat remaining ingredients until smooth (15 seconds in blender). Pour over mixture in dish. Bake at 400 degrees until knife inserted in center comes out clean, about 30 minutes.
