1 c. chopped zucchini
1 c. chopped tomato
1/2 c. chopped onion
1/3 c. grated Parmesan cheese
1 c. milk
2 eggs
1/2 c. Bisquick baking mix
1/2 tsp. salt
1/4 tsp. pepper

Preheat oven to 350 degrees. Grease pie plate, 9" x 1 1/4". Sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients until smooth. Pour into plate. Bake until knife inserted in center comes out clean, about 35 minutes. Cool 5 minutes. Garnish with tomato and zucchini.
