BAKED CUCUMBER 
2 tsp. butter
3 slices bacon, cut in pieces
3 big cucumbers, halved lengthwise
2 ripe tomatoes
1/3 c. chopped onion
1 tbsp. butter
1/2 c. seasoned bread crumbs

Cook bacon; scoop centers from cucumbers to 1/4 inch of skin. Scald inside of skin. Dice cucumber pulp and tomato. Add to bacon. Add onion and salt and pepper. Cook 3 minutes. Remove from heat. Add crumbs. Put mixture in cucumber skins. Dot with butter. Place in bread pan. Add 1/2 inch water to pan. Bake 25 minutes at 350 degrees. Skins may be eaten. Serve hot or cold.
