RICE PILAF 
3/4 stick butter
1 1/2 c. uncooked rice (white)
1 can condensed beef consomme
1 can condensed onion soup
1/2 lb. fresh mushrooms, trimmed and sliced

Melt butter in 2 quart casserole. Stir in rice to coat with butter. Add soups and mushrooms, mix well. Cover and bake at 325 to 350 degrees until rice is tender and liquid is absorbed. Stir occasionally while baking.

NOTE: If the rice seems to be a little undercooked after the liquid has been absorbed, I add a little hot water and continue to cook.
