BLACK BOTTOM CUPCAKES OR DEVIL
DOGS
 
CREAM CHEESE CENTER:

8 oz. cream cheese
1 egg
1/3 c. sugar
1/8 tsp. salt
1 c. semi-sweet chocolate chips

CHOCOLATE BATTER:

1 1/2 c. sifted flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/3 c. oil
1 tbsp. vinegar
1 tsp. vanilla
1/4 c. cocoa

Preheat oven to 350 degrees.

Cream Cheese Center: Cream cream cheese and sugar together. Add unbeaten egg and salt. Stir in chocolate chips. Set aside.

Chocolate Cake: Sift flour, sugar, baking soda, salt and cocoa. Add water, oil, vinegar and vanilla. Beat until smooth.

Line muffin tins with paper liners, or I prefer foil liners. Fill half full with chocolate batter. Top each with a heaping teaspoon of cream cheese mixture.

Bake 30-35 minutes. Makes 2 dozen. Store in an airtight container. These are great at Christmas time.
