BAKED INDIAN PUDDING | |
1/2 c. yellow cornmeal 4 c. hot milk 1/2 c. maple syrup 1/4 c. molasses 2 eggs, slightly beaten 2 tbsp. melted butter 1/3 c. brown sugar 1 tsp. salt 1/4 tsp. cinnamon 3/4 tsp. ginger 1/2 c. cold milk 1. In double boiler, slowly stir cornmeal into hot milk. Cook 20 minutes. 2. Preheat oven to 300 degrees. Lightly grease 2 quart casserole dish. 3. In small bowl combine remaining ingredients; stir into cornmeal mixture and mix well. 4. Turn into casserole dish and pour on cold milk. But don't mix. 5. Bake 2 hours uncovered. Let stand 30 minutes. Serves 8. |
