3 lb. ricotta cheese
2 c. flour
9 eggs, beaten
1 tbsp. vanilla
1/2 pt. heavy cream
2 tbsp. flour
1 orange or lemon rind

Blend all together. Make crust (below).

CRUST:

1 egg, beaten
2/3 stick butter
3 tbsp. sugar
1 1/4 c. flour
1 tsp. baking powder

Mix and pat into 9 inch spring form pan; brush with egg white and dust with flour. Pour in cheese mixture and bake at 350 degrees for 1 1/4 hours. Shut off oven but leave cake in for 1 hour. DO NOT OPEN OVEN DOOR FOR 1 HOUR.
