STRAWBERRY BREAD 
3 cups flour
1 tsp. baking soda
1 tsp. salt
4 eggs beaten
2 packages (10 ounces each) frozen strawberries, thawed and drained (reserve 1/2 cup juice)
cream cheese spread (see below - optional)

Cream Cheese Spread:

Reserved 1/2 cup strawberry juice
1 package (8 oz) cream cheese, softened

Combine all dry ingredients and mix well. Make a well in the center of mixture and add all liquid ingredients. Mix by hand. Pour mixture into two 8x4x2 inch loaf pans (greased and floured.)

Bake at 350°F for 60 minutes or until done. If you wish to add the optional cream cheese spread, combine cream cheese and enough strawberry juice to make a smooth consistency. Cut bread very thin and spread with cream cheese spread. Sandwich two slices of bread together with spread and chill until ready to serve.

Serves 8 - 16.
