APPLESAUCE ROLL 
ROLL:

3 eggs
3/4 c. sugar
1 c. sifted flour
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cloves
1/2 c. apple sauce
Powdered sugar

FILLING:

8 oz. softened cream cheese
3 tbsp. orange juice concentrate
2 tbsp. grated orange rind
1/2 c. finely chopped pecans or walnuts
1/4 c. minced raisins
1/4 c. sugar

Beat eggs 5 minutes or more until pale and thick, add sugar slowly beating into eggs, add applesauce. Resift all dry ingredients together and gently fold into egg mixture. Prepare 10x15x1 jelly roll pan by greasing, lining with waxed paper then greasing paper. Spread mixture evenly onto pan. Bake 375 degrees for 15 to 20 minutes. Sprinkle powdered sugar on a towel, turn layer onto powdered towel, trim edges 1/4 inch with shears. Remove waxed paper. Roll up with towel, cool completely. Unroll and spread filling over and tightly reroll (without towel). Beat cream cheese until light and smooth, beat in all other ingredients. Good, delicate flavor, we enjoy this for brunch or with coffee.
