MINIATURE CHEESECAKE 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can pie filling, peach, blueberry or sweet cherry
1/2 c. chopped nuts, optional

Line cupcake pans with liners, place a wafer in bottom. Combine remaining ingredients (except pie filling) and beat until light and fluffy. Place in preheated 375 degree oven for 15 to 20 minutes or until set. Remove from heat, let cool. Top each with a tablespoon of pie filling. Sprinkle with nuts, if desired. Chill.
