MINIATURE CHEESECAKES 
24 cupcake liners
24 vanilla wafers
2 pkgs. (8 oz. each) cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can peach, blueberry or cherry pie filling
1/2 c. sliced nuts (opt.)

Line cupcake pans with liners. Place a vanilla wafer in bottom of each liner. In a small bowl beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.

Fill liners 2/3 full with the cheese mixture. Bake in preheated 375 degree oven for 15 to 20 minutes or until set. Top each with a spoonful of pie filling (and 1 teaspoon of nuts, optional). Chill. Serves 24.
