MINIATURE CHEESECAKES 
2 1/2 c. graham cracker crumbs
8 tbsp. melted butter
1 c. sugar

Mix together. Put about 1 teaspoon into small bonbon papers in mini cupcake pans. Take round object (small glass or spice jar lid) and press mixture into firm flat base. Makes 100 cupcake bases.

TOPPING:

20 oz. cream cheese, soft
2 eggs
1 c. sugar
2 tsp. vanilla

Mix and beat until smooth. Put about 1 teaspoon of this topping on graham cracker base. Bake about 15 minutes at 350 degrees. When cool put on serving tray and top with green mint jelly and strawberry preserves or serve plain. FREEZES WELL.
