SQUASH/TOMATO/ONION CASSEROLE 
Layer the following fresh vegetables in a casserole dish that has been sprayed with PAM or greased with butter.

Thin slices of zucchini and yellow summer squash, tomato, (cut in quarters or halves depending on the size of the tomato), thin slices of white onion added to layers in rings, Parmesan cheese, dabs of butter over the top. Season with a seasoned salt and some cracked pepper; sometimes I added Italian seasoning, depending on what I am serving with it. (If I have on hand, I also add some fresh parsley and some fresh mushrooms into the layers.) Add a small amount of water before baking for moisture, keeping in mind that all of these vegetables make their own juices.

You can either bake uncovered in a 350 degree oven for about 45 minutes, or you can cook in your microwave oven for about 12 minutes, the time depending on how your particular microwave cooks.

Since microwave ovens vary in power, you may need to adjust your cooking time.
