MINIATURE CHEESECAKES 
2 (8 oz.) pkg. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
24 vanilla wafers
1 (21 oz.) can cherry or blueberry pie filling

Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line small muffin pans with paper bake cups and place a vanilla wafer in bottom of each cup. Fill the cups 2/3 full with cream cheese mixture. Bake at 375 degrees for 15-20 minutes or until set. Top each with about 1 tablespoon pie filling. Chill. Makes 2 dozen.
