MINIATURE CHERRY CHEESE CAKE 
1 can Eagle brand condensed milk
8 oz. cream cheese
1/3 c. lemon juice
1 can cherry pie topping
Foil cupcake liners
Vanilla wafers

Beat cream cheese with condensed milk and lemon juice. Put cupcake pappers on whatever tray you'll serve on, spray liners with Pam. Put 1 or 2 vanilla wafers in each cup. Pour cheesecake mixture over the top of vanilla wafer. Place one cherry from pie filling can on top each 1 (use a small spoon, a little juice and 1 cherry). Refrigerate and serve. At Christmas you can stick a mint leaf by the cherry or pipe green frosting aside the cherry. Makes about 48 to 60 depending on how full you fill the cups.
