MINIATURE CHEESE CAKES 
3 (8 oz.) pkgs. cream cheese
5 eggs
1 c. sugar
1 tsp. lemon juice
1 tsp. vanilla

Beat cheese. Add sugar gradually. Add eggs, one at a time. Add flavoring. Use small muffin pans, line with paper cups. Fill almost to top. Bake at 300 degrees for 25 minutes. Must rise and form dent. Cool 5 minutes.

ICING:

1 pt. sour cream
1/2 c. sugar
1 tsp. vanilla

Mix the above ingredients well. Cover entire top with icing, put a bit of strawberry preserves in center. Place in oven for 5 more minutes. These freeze very well.
