MINIATURE CHEESE CAKES 
3/4 c. sugar
2 (8 oz.) pkg. cream cheese
3/4 c. sour cream
1 tsp. vanilla
3 eggs
2 1/2 tbsp. sugar
Graham cracker crumbs

Butter 4 miniature muffin pans, sides and bottom. Sprinkle with graham cracker crumbs and shake. Mix 2 (8 ounce) cream cheese, 3/4 cup sugar and 3 egg yolks. Beat 3 egg whites very stiff and fold in. Fill pans almost to top.

Bake about 15 minutes at 350 degrees. Remove from oven and cool. When they fall a little, mix sour cream, 2 1/2 tablespoons sugar and vanilla. Drop on inner circle of cakes, then bake 5 minutes more at 400 degrees.
